Oven Roasted Potatoes
4  Large Idaho Potaoes large cubed (pieces 1-1/2 inch X 1-1/2 inch)
Place cubed Potatoes in a pot of boiling water for 10 minutes (Preheat oven to 425 degrees)
Potatoes will still be firm but not hard.
After  10 minutes drain and mix with the following ingredients:
2 T.  olive oil
2 t.   garlic powder
2 t.  Rosemary chopped fine or dry
2 t.  onion powder
1 t.  Chili powder
1/2 t. cayenne
2 t.  Salt
1 t.  Black Pepper
Mix boiled potato cubes with olive oil first, then toss with spices and place on a roasting pan.
Place in preheated oven and roast at 425 for 10 minutes, Flip potatoes with a spatula or turner, turn oven down to 375 and roast for 15 minutes until golden brown, and potatoes pop when you bite them!

EASY STEAK MARINADE

1/2 cup Olive Oil
1/2 cup Teriyaki Sauce
1 T Lemon Juice
1 T Rice Wine Vinegar
1 T Fresh or Dried Rosemary or for a change, leave out rosemary and add 1 T fresh or dried Thyme
1 t grated Dried Ginger or for a change, leave out ginger and add 2 t Chili powder.
1 t Cayenne Pepper
4 Garlic Cloves Crushed
3 Scallions chopped

Mix together and leave steaks in marinade for 1- 2 hours. Tougher cut of meat, longer time.
Salt and fresh cracked black pepper just before cooking.

A VERY, VERY LARGE P90 HAMBURGER

This is not a recipe, just the ingredients:

2  – 1/3 pound Beef patties grilled by Tom Hill.

2 - Grilled Cheese sandwiches (4 slices of cheese) on 4 slices of sourdough

3  – slices of Bacon

2  – Fried overeasy eggs

2- slices of cheese for the burger (Thats 6 total if your keeping track)

Ugly ripe Tomatoes, grilled onions, green pepper, and whatever other condiments.

Believe me when i say this was an awesome sandwich!

SIMPLE  SALSA

The key to making this salsa recipe is “fresh” ingredients.  I prefer to hand cut everything.

12-16  Roma or combination of two or three varieties.  Seeded and  chopped.

1  Sweet Red Pepper seeded and chopped

1  Jalapeno seeded and chopped.  (Leave the seeds in for more heat)

1  Large Sweet Onion Chopped

3  Cloves of fresh Garlic  crushed

1 Lime squeezed

1 Tablespoon fresh, chopped fine, Cilantro, with some stems

2 teaspoons rice wine vinegar

Fresh cracked black pepper to taste ( 1 teaspoon)

Kosher Salt to taste (2 teaspoons)

Combine all ingredients and enjoy with nachos, chili, eggs, fish or whatever your heart desires.  Will stay good for atleast a week in the fridge.  Makes 2 quarts
